Cheap & Easy Family Pancakes
Cheap and easy pancakes: Approx total cost <$4.50
Ingredients
- 2 Cups of All-Purpose Flour (Approx $.50)
- 1 tablespoon baking powder (Approx $.15)
- 3 Tablespoons of Sugar *or sub pure Maple Syrup* ($.45-$1.50)
- 2 cups of milk *I prefer whole or raw* (Approx $.50)
- 2 eggs, beaten (Approx $.65)
- 8 tablespoons melted salted butter (<$2)
Instructions
1. Prepare the Batter:
In a large mixing bowl, whisk together the flour, baking powder, and sugar (if using). If substituting with maple syrup, reserve it for later.
2. Combine Wet Ingredients:
In another bowl, whisk together the milk, eggs, and melted butter. If using maple syrup instead of sugar, add it to this mixture.
3. Mix Batter:
Gradually pour the wet ingredients into the dry ingredients. Stir gently until just combined. It's okay if there are small lumps in the batter; overmixing can make the pancakes tough.
4. Preheat Griddle or Pan:
Heat a griddle or non-stick pan over medium heat (we use a cast iron pan). If needed, lightly grease the surface with additional butter or oil.
5. Cook Pancakes:
Pour about 1/4 cup of batter onto the heated griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
6. Flip and Cook:
Carefully flip each pancake with a spatula and cook until the other side is golden brown, about 1-2 minutes more.
7. Serve:
Transfer the cooked pancakes to a plate and keep warm. Repeat with the remaining batter, adjusting the heat as needed.
Serve Warm:
Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruits, whipped cream, or nuts.
Enjoy your homemade pancakes! Adjust sweetness and consistency to your preference by modifying the amount of sugar or maple syrup used.
Notes
Total cost of this meal is under $5 and easily feeds our family of 6
Option 2
2. Yogurt Parfaits! This one is a favorite of mine because it takes less than 5 minutes. Bonus- it allows me to use whatever fruit/ produce I have on hand before it goes bad. I typically grab a 32 oz of greek yogurt at the store such as Chobani that you can see here https://www.hy-vee.com/aisles-online/p/70957?srsltid=AfmBOoonAD4O2GRMKEFUfQ7Q-rDjKmbXTfKbY-hXqyRG1kyffg5vCXf8n5E and top with any fruit and/or granola we have on hand! One tub of yogurt usually makes enough rounds for us to do this twice, making this another top contender for easy breakfast ideas under $5!
Option 3
3. An oldie but a goodie- Eggs and Bacon! Scrambled, fried, sunny side up, there are no right or wrongs to this simple, protein packed breakfast! Budget tip- if groceries are tight this month, you do not have to add a meat, my kids often like just eggs for a simple and cheap breakfast idea
